Pumpkin Muffins

Ingredients:

  • 4 eggs

  • 2 cups sugar

  • 2 cups pumpkin 

  • 1 ½ cups cooking oil

  • 1 cup raisins 

  • 1 cup nuts

  • 3 cups flour

  • 2 teaspoons baking powder

  • 2 teaspoons baking soda

  • 2 teaspoons cinnamon 

  • 1 teaspoon salt

Instructions:

  1. Beat eggs, sugar, pumpkin, and cooking oil. Add raisins and nuts if desired.

  2. Blend flour, baking powder, baking soda, and salt to egg mixture.

  3. Bake at 350 for 20 to 30 minutes. Freezes well. Serves 24.
